Chocolate and peppermint ice cream

This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.

As part of the campaign, we’ve collaborated with baby weaning expert Shikha Gill, founder of My Little Food Critic, to create recipes based on Britain’s favourite regional delicacies.

This NO ADDED SUGAR ice cream is quick to whip up and tastes delicious. It takes inspiration from the peppermint flavour of the regional delicacy Kendal Mint Cake to make an energising and refreshing weaning friendly delight.

Baby friendly chocolate and peppermint ice cream

Ingredients

  • 2 frozen bananas (peeled, chopped, frozen overnight, the more ripe, the sweeter the ice cream will be)
  • 2 tbsp cacao powder
  • A couple of drops of peppermint extract

Steps


  1. Blend together the frozen banana, cacao powder and peppermint extract in a high speed blender. You may need to scrape the sides down a couple of times.
  2. Once the ice cream reaches a soft serve consistency, serve immediately.
