This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.
As part of the campaign, we’ve collaborated with baby weaning expert Shikha Gill, founder of My Little Food Critic, to create recipes based on Britain’s favourite regional delicacies.
This easy hot pot recipe is based on Lancashire Hotpot, one of the UK’s favourite regional delicacies. It is so flavoursome and makes a hearty meal for the whole family to enjoy together. You can easily freeze smaller portions for baby or even double the recipe and freeze half for another day. Filled with veggies, protein and iron, this is a great meal for your baby.

Servings: Family
Prep time: 10 mins
Cook time: 60 mins+
Ingredients
- 3 tbsp butter
- 500 g diced lamb or minced lamb
- 2 onions, finely diced
- 1 heaped tbsp flour
- 2 cups/480ml low salt/no sodium stock
- 1 tbsp Worcestershire sure
- 2 bay leaves
- 1/2 tsp black pepper
- 2 bay leaves
- 3 carrots, peeled and finely diced
- 2-3 potatoes, peeled and sliced
- 1/2 tsp dried thyme
Steps
- Preheat the oven to 170C/325F.
- Heat a large oven proof dish over a low-medium heat. When hot, add 1 tbsp butter. Cook the lamb, until browned (around 4 minutes). Set aside.
- Add another tbsp of butter to the same pan. Then add the diced onion and carrots. Sauté for 5minutes.
- Next add the browned lamb, flour, stock, Worcestershire sauce, black pepper and bay leaves to the pan. Stir to combine and then popon the lid and cook for 30 mins over a low heat.
- Switch off the gas and layer the sliced potatoes over the top. Start from the outside, and layer the potatoes, moving towards the centre.
- Melt the remaining butter and brush the top of the potatoes with the melted butter.
- Sprinkle over the dried thyme.
- Pop into the oven for 1 hour, until the potatoes are cooked through and can mush between your thumb and forefinger.
- This can be served to baby as it is or if you prefer you can pop this into the blender for a smoother consistency. You may want to cut the sliced potatoes into finger width strips. Any leftover can be stored in the fridge for 2 days in an airtight container or frozen for up to 2 months.
