One pot chicken pie

This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.

As part of the campaign, we’ve collaborated with baby weaning expert Shikha Gill, founder of My Little Food Critic, to create healthy weaning recipes. 

This pie comes together in one pot, is packed with other veggies and can be made ahead of time for a quick and easy dinner. Delicious, warming and loaded with goodness. 

One pot chicken pie weaning friendly recipe

Servings: Family 

Prep: 10 mins 

Cook time: 50 mins

Ingredients:

2 tbsp unsalted butter

1 large carrot, finely diced

1 onion, finely diced

½ courgette, finely diced

1 tbsp minced garlic

1 tsp thyme

½ cup spelt flour

1 cup whole milk

1 cups chicken stock

1 cups peas, frozen

750g diced chicken breast

1 sheet puff pastry

1 egg, whisked 

Steps:


1. Heat oven to 200C / 400F

2. In a large oven proof dish, melt the butter over medium heat. Add the diced onion, carrots and celery, sauté for 5 minutes

3. Add the garlic, thyme and flour. Stir to combine

4. Next add the milk and stir to create a thick sauce

5. Slowly pour in the chicken stock and stir 

6. Add the frozen peas and chicken. Stir to combine 

7. Slice the pastry into small squares and place on top of the chicken mixture

8. Brush the whisked egg over the puff pastry. Bake for 30 minutes until golden.

9. Store in the fridge for 2 days or freeze for up to 2 months
