Six ingredient currant rolls

This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.

As part of the campaign, we’ve collaborated with baby weaning expert Shikha Gill, founder of My Little Food Critic, to create healthy baby weaning recipes. 

The easiest and most delicious gently spiced rolls that taste so flavoursome and use just 6 ingredients. Perfect warm, slathered with butter or as they are for a snack. Inspired by Eccles cakes - these are loaded with currants for a naturally sweet flavour.

Prep time: 10 mins

Cook time: 25 mins

Servings: 6 regular or 12 mini

Ingredients:

1 cup spelt flour

1 cup full fat Greek yogurt

1 tsp baking powder

1 tsp ceylon cinnamon

1 tsp vanilla paste

1/4 cup currants (or more to taste)

2 tbsp milk of choice (optional)

Steps:


  1. Heat oven to 360°F/180°C and line a baking tray with parchment paper.
  2. In a large bowl, combine all of the ingredients. Use a spoon or your hands to combine the mixture, until a dough forms. You may find you need some additional flour.
  3. Using your hands for a balls from the dough and place onto a lined baking tray.
  4. Brush with milk, if using.
  5. Bake for 20/25 minutes, until golden brown.
  6. Store in an airtight container for 3 days or freeze for up to 2 months.
