Scotch eggs are a regional delicacy from Whitby in Yorkshire and make a delicious quick picnic snack. Great to batch cook and taste delicious on their own for a satisfying snack, or as part of a larger baby weaning meal.
Scotch eggs weaning recipe
Servings: Family
Prep: 20 mins
Cook time: 30 mins
Ingredients:
- 6 eggs
- 400g sausage meat, of choice
- ½ cup breadcrumbs
Steps:
- Bring a pot of water to a boil and then lower in the eggs. Simmer for 10 minutes
- Scoop out the eggs and transfer to a bowl of iced water. Allow to cool for 10 minutes and then peel and set aside
- Preheat oven to 180C / 360F and line a baking tray with parchment paper
- Cover each egg in the sausage meat and then roll into the breadcrumbs
- Bake for 15 minutes
- Store in the fridge in an airtight container
