Cheese and onion Cornish pasties

This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.

As part of the campaign, we’ve collaborated with baby weaning expert Shikha Gill, founder of My Little Food Critic, to create recipes based on Britain’s favourite regional delicacies.

Create weaning friendly Cornish pasties which are brimming with some much flavour and don’t take long at all to whip up. They are great for a little snack and also freeze really well.

Cheese and onion Cornish pasties weaning recipe

Servings: 6 regular/12 mini

Prep time: 10 mins 

Cook time: 45 mins

Ingredients: 

2 potatoes, peeled and cubed

1 tbsp unsalted butter

1 large white onion, finely diced

1/2 tsp black pepper

1 cup grated cheddar cheese

1 sheet ready rolled puff pastry

1 egg or 1/4 cup milk of choice

1. Heat oven to 380°F/200°C and line a baking tray with parchment paper.

2. Boil the potatoes in a large pan for around 15 minutes, until soft.

3. While the potatoes are cooking, melt the butter in a small pan over a medium heat. Cook the onions for 5 minutes. until soft.

4. Drain the potatoes and mash until smooth. Add the onions and black pepper, stir to combine. Set aside to cool.

5. Use a glass or cookie cutter to cut out 6 large circles from the pastry.

6. Evenly distribute the potato mixture between each circle. Then fold over and seal with a fork or crimp by folding the pastry over to seal it.

7. Brush the tops with the egg or milk.

8. Place on the baking tray and bake for 20 minutes.

9. Allow to cool before serving.

10. These can be stored in an airtight container in the fridge for 3 days or frozen for up to 3 months.
