This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.
As part of the campaign, we’ve collaborated with chef Adam Shaw, founder of At Dad's Table, to create three low-cost batch cooking recipes.
With the kids back to school Adam wanted to showcase one of his family’s favourite meals. A sausage casserole packed full with lots of healthy vegetables and pulses, economical to make and perfect for leftovers too. Here’s the recipe.
Serving: Family (Suitable for babies aged 6 months+)
Prep: 5 mins
Cook: 30 mins
Ingredients:
- 8-10 good quality sausages
- 1 onion, peeled and chopped
- 3 cloves of garlic, crushed and chopped
- 2 potatoes, peeled and diced
- 3 carrots, peeled and diced
- A teaspoon each of dried basil, oregano and thyme
- 100g frozen peas
- 600ml chicken/vegetable stock
- 1 tablespoon of flour
- 100g fresh spinach
- 1 x 400g can of cannellini/ butter beans
- Olive oil
Steps:
- In a wide saucepan, fry the sausages for around 5-6 minutes and then set aside.
- Fry the onions in a little olive oil in the same frying pan for 3-4 minutes on a low heat. Then add the garlic, carrots and potato and cook for a further 2 minutes.
- Add the herbs followed by the frozen peas and cook for another 2-3 minutes
- Whisk the flour into the stock then pour into the saucepan. Add the sausages, bring to the boil then reduce to a simmer.
- Cover with a lid and cook for around 15 minutes.
- Remove the lid, add the spinach and bean and cook for a further 2-3 minutes before serving.
