Three ingredient shortbread

This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.

As part of the campaign, we’ve collaborated with baby weaning expert Shikha Gill, founder of My Little Food Critic, to create recipes based on Britain’s favourite regional delicacies.

Shortbread is a regional delicacy from Scotland and this easy shortbread recipe takes just a few minutes to prep and are delicious. Free from added sugar, they get their sweetness from the banana, making them perfect for weaning babies.

Servings: 12-24 cookies

Prep time: 10 mins

Cook time: 12 - 16 mins

Ingredients

  • 1 ripe banana, medium sized
  • 1 1/2 cups spelt flour
  • 1/2 cup unsalted butter, at room temperature

Steps


  1. Preheat oven to 170c/350f and line a baking tray with parchment paper.
  2. In a bowl, combine the butter and spelt flour using your hands.
  3. Mash the banana until smooth and then pour into the flour and butter mixture.
  4. Combine until a soft dough forms.
  5. Roll out the dough to roughly 1 cm thick.
  6. You may need to flour the surface first.
  7. Using a cookie cutter, cut out shapes from the dough, or use a pizza cutter to slice. 
  8. Transfer the cookies to the baking tray.
  9. Bake for 12 minutes for small cookies and 16 minutes for larger cookies.
  10. Store in an airtight container for 3 days.
