Sausage rolls with hidden vegetables – Suitable for 12+ months

This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.

As part of the campaign, we’ve collaborated with chef Adam Shaw, founder of At Dad's Table, to create three low-cost, healthy weaning recipes. 

Suitable from 12 months+ these sausage rolls are packed with hidden veggies, perfect for lunch or a snack. Hidden inside is some grated carrot and courgette for extra nutrients and vitamins.

Sausage rolls with hidden veggies – Suitable for 12+ months

Servings: 8-10 portions

Ingredients:

  • 400g good quality sausagemeat
  • 1 courgette, finely grated
  • 1 carrot, finely grated
  • 100g cheddar cheese, finely grated
  • 1 tablespoon of dried oregano
  • 1 sheet or pre-made puff pastry
  • 1 egg
  • 1 tablespoon of black sesame seeds

Steps:


1. Heat the oven to 180. Take a pack of sausage meat (or squeeze the meat out of 8-10 sausages). Finely grate a carrot and a courgette then squeeze the water out. Add to the sausage meat along with a tablespoon of dried oregano and the cheese. Mix well.

2. Spread a pack of puff pastry out on a chopping board and slice length ways in two. Divide the mixture and spread along the middle of each half of the puff pastry.

3. Roll the pastry up and pinch both sides together then flip it over. Use a sharp knife to slice the pastry into 8-10 portions then slice a little way across the top of each one.

4. Wash with egg then sprinkle with black sesame seeds (if you want) and place on a baking tray.

5. Bake for 25 mins at 180, remove to cool on a wire tray then scoff.
