This recipe is part of our Good Square Meal campaign in collaboration with FareShare, the UK’s biggest food waste charity, to fund the distribution of up to 250,000 meals to children who need them most.

As part of the campaign, we’ve collaborated with baby weaning expert Shikha Gill, founder of My Little Food Critic, to create healthy baby weaning recipes. 

This lovely winter warmer is so simple to make and tastes delicious. Serve as a side dish or as a snack. For younger babies, you’ll want to give this a blitz or slice the potatoes into finger sized strips.

Servings: Family sized

Prep time: 5 minutes

Cook time: 40 minutes

Ingredients:

  • 2 tbsp unsalted butter
  • 1 large red onion, finely sliced
  • 1 large potato, peeled and cut into think slices/strips
  • 1 cup grated cheddar cheese

Steps:


1. Preheat the oven to 200°F/ 180°C.

2. Melt 2 tbsp butter over a low/medium heat in a large pan and cook the onions for about 10 minutes, until soft and starting to brown. Set aside.

3. In the same pan, add the remaining butter and lightly pan fry the potatoes for 3-4 minutes.

4.  Layer the potatoes into a baking dish, top with onions and cheese and repeat the process.

5. Bake for 25 minutes, until golden brown.

6. Allow to cool slightly before serving.
